Double Door Crystal Spark Cap Classique ~ 2020
The Double Door Crystal Spark is a Cap Classique in the classic French style. The grapes were sorted by hand and pressed as whole bunches before fermentation took place in four old French barrels. After three months in the barrel, the base wine was blended, bottled by hand and sealed with crown corks. The Liqueur de Tirage was added and the wine was allowed to complete its second fermentation. This brut cuvée matured for 39 months on the lees in the bottle before disgorging.

Grapes: 64% Pinot Noir, 36% Chardonnay – ABV 11.5%
Tasting notes: Elegant citrus and biscuit notes on the nose, fresh citrus flavors with subtle nutty notes on the palate. Crystal Spark has perfect perlage and fresh, intense flavors.
Pairings: Goes well with oysters and seafood, sushi, sashimi and ceviche.

La Niña Semillon ~ 2023

Climate wines have been crafted to create an awareness of two climate phenomena that the world has been experiencing in the past couple of years: El Nino and La Nina. These wines are serious enough to intrigue the serious wine geek, yet approachable for the first-time wine drinker. The use of two unconventional varieties, Cinsault and Semillon Gri from single vineyards truly reflects the variety in a specific terroir.
Soon to be cult wine, this truly reflects what skin contact can do to this amazing grape variety.

Grapes: 100% Semillon Gris – ABV 12.48%
Tasting notes: Wine has a nose of stone fruit with underlaying notes of cinnamon and has a lot of weight on the palate due to the skin contact. The concrete tank gives the wine some mineral persistence and truly shows the terroir of the unique site.
Pairing: Would go well with any cheeseboards, fish, and creamy dishes.

Post House Mery Widow Shiraz ~ 2021
Post House wines are perhaps the darkest colored wine to be found anywhere. The objective is to interfere as little as possible in the creation of the wine making process. We use traditional wine making methods including natural yeast fermentation, basket pressing and no fining or filtering. Hermann Gebers bought the farm in 1981 in the picturesque area between the towns of Somerset West and Stellenbosch. Situated on a ridge, the winery offers panoramic views of Cape Point, False Bay and the surrounding Helderberg Mountains. This area is one of the preeminent wine regions in South Africa and falls under the ward of Stellenbosch.
Appellation: Stellenbosch, South Africa
Grapes: 100% Shiraz – ABV 14.5%
Aging: The Maturation potential: 6-8 years.
Tasting notes: An inky black full-bodied wine that delivers a nose of red cherries, white pepper, floral violets and a touch of liquorice. Firm and rich palate with structured tannins and a lingering finish.

Alto Cabernet Sauvignon ~ 2019

Grapes: 100% Cabernet Sauvignon – ABV 14.6%
Tasting notes: Bright red with a rich, deep hue with dark fruit with bright notes of fynbos and graphite undertones. Complexity and great structure of plum, black-currant and fig paste with a firm line of graphite adding a luxurious dimension to the palate.
Pairing: Excellent enjoyed on its own or served with red meat dishes like ostrich, beef fillet or lamb It is also a great accompaniment to game fish like yellowtail or tuna.
