Bourgogne Chitry Blanc Constance ~ 2022 ~

Appellation: Bourgogne Chitry Blanc Constance

The “Signature” range offers carefully created regional and communal appellation wines, true reflections of our northern Burgundy. Each one expresses the typicity of the wine region from which it comes, expressing the nuances and subtleties specific to its terroir, exacerbated by the meticulous work and quality signature of Olivier Morin’s wines.

Grapes: Chardonnay 100%

Tasting notes: Its aromas of white flowers and its mineral frame make it a delicately chiseled cuvée.

Pairings:  Accompany it with gourmet dishes such as a poultry blanquette (chicken, mushroom creamy dish)

Petulant Naturel Sparkling Rosé ~ 2022 ~

This Pétulant Naturel is Birichino’s production of a complex and delicious, lightly “pétillant” wine using traditional lo-fi methods requiring neither luxury-group funded production equipment, nor marketing fluff.

It is from the Montague Vineyard is the result of direct pressing of Carignane planted in Tokay Fine Sandy Loam soils by the Shinn Family in the Roaring Twenties, nearly a century ago. The base wine is fermented native in steel, and in late Spring following harvest, a small amount of juice frozen at harvest is thawed, begins fermenting, and is added back to the base wine to ferment a second time in bottle, where the fine lees remain, not filtered or disgorged adding their own savory textural note.

Tasting notes: A cloudy yet lightly pétillant et pétulant – subtly refreshing, soft and fragrant bubbles.

Tinto ~ 2019 ~

The vines are East and North faced with more than 60 years old planted over 500mts altitude in Soutelo do Douro – Cima Cargo. 2019 was a warm vintage with low production. Also, low humidity provides fast maturations to the grapes harvested in the last week of August in order to achieve a good· and natural acidity with a balanced maturation.

Grapes: Touriga Franca Tinta Roriz, Tinta Amarela, and Rufete
Tasting notes: Violet in color, on the nose reveals discreet, with predominant freshness, green, minerality a light hint of wood. On the palate is fresh, light, predominantly with a strong minerality, elegant and not very lush.

In continuous growing, this wine becomes light with predominant fresh notes, red and black fruit, with the tannins well round and a small touch of wet stone. The ageing on the barrels is very discreet and well-integrated with medium-long finish. The wine aged in used French oak barrels for 20 months.

Rosso di Montalcino ~ 2017 ~

The Brunello’s younger brother – Rosso di Montalcino, a wine with the same characteristics, made with the same grape variety, the Sangiovese, but coming from younger vineyards. Made from the various vineyards owned on the south-east/south-west slope (220-400m) of the municipality of Montalcino, with altitudes ranging from 250 to 400 meters above sea level. The soils are exposed to the south-east with a sandy-loam texture with the presence of limestone slabs and abundant skeleton. Matured for a few months in French and Slavonian oak, followed by aging in bottle.

Grapes: Sangiovese 100%
Tasting notes: Intense ruby red in color, with violet reflections. Intense, fresh and fruity aroma, with characteristic notes of cherry, plum and black. The taste is soft and mineral, with a good structure and well-balanced tannins.
Pairings: Meat or mushroom-based main dishes, Meat or mushroom-based pasta or rice dishes.
